- Prepare For of two pancakes-.
- You need 1 of Cucumber.
- It's 1 of Medium Onion.
- It's 1 cup of cleaned and shredded spinach.
- You need to taste of Salt.
- It's to taste of Pepper Powder.
- It's 1 cup of lump free curd.
- You need 1 tsp of cumin seeds.
- You need 1/2 cup of rice flour.
- Prepare 1 of green chilli finely chopped.
- You need 1 tbsp of Olive oil.

- Grate cucumber and add little salt on it Leave it in a bowl for ten minutes. Adding salt will help cucumber in leaving it's water..
- Squeeze the cucumber nicely and add with other ingredients to make pancakes..
- Take all the ingredients except oil in a bowl and make a batter by adding curd and little water to it..
- Let the batter rest for some time so that rice flour can absorb the water and swell. The batter shouldn’t be runny nor it should be very thick.
- Heat a non-stick pan/ tawa When it’s hot enough pour two laddles of the mixture on spread like a pancake.
- Apply little oil on the sides(around it) When you see the sides have become brown slightly, turn it and let it cook on the other side too..
- When pancake is done remove it from the pan and serve hot & crispy pancake with ketchup or any chutney..
