Ingredients of Stir Fry Noodles and Microwaved Eggs
- Prepare 2 packs of noodles.
- Prepare of Veggies (I have purple and white cabbage, tomatoes, Scotch Bonnet and onions here; all chopped/shredded).
- Prepare 1 tbsp of Oil of choice.
- It's 2 of Eggs.
- It's 1 pinch of Salt.

- Pour the noodles into a microwavable bowl and microwave for 3-5 mins, drain and set aside..
- Put a wok or deep pan on high heat, once it's hot, add the oil, allow to sizzle, add your onions and peppers and spices as you deem fit and fry for 2-3mins, then add your shredded cabbage and your noodles seasoning and taste, adjust seasoning if need be.
- If you like it brothy, add a little water and allow to steam then toss in your drained noodles and use a tong to mix all together, then cook for another 2mins and turn off the heat.
- For the eggs: get a clean deep ceramic bowl and fill it with about 2 fistful of water, season the water with salt and then break the egg gently into it (you may break into a container and just ease the eggs into the water too..
- Microwave for 2 mins if you like the yolk soft and gooey or 3mins if you want the yolk hard. Afterwards, bring out from the microwave and gently drain the water, then use a slotted spoon to remove the egg and set aside..
